Aegaea Organic is a premium organic extra virgin olive oil produced by the Protoulis family on the Greek island of Lesvos.
Unlike oils made from olives sourced from multiple growers, Aegaea Organic is Estate Grown — produced exclusively from olives cultivated on the Protoulis family's own plots.
The olives are hand-picked, organically cultivated and cold extracted at just 25°C.
Made exclusively from the indigenous Kolovi olive variety, Aegaea Organic combines an intensely fruity aroma with a rich texture, full flavour and remarkably low acidity of maximum 0.2% at bottling.
100% Kolovi – A Variety of Lesvos
At the heart of Aegaea is Kolovi, the characteristic olive variety of Lesvos.
Protoulis deliberately selected Kolovi as the sole variety for Aegaea to showcase its individual character and potential.
Kolovi is particularly well adapted to the landscape of Lesvos. The variety requires relatively little water and develops a deep root system, allowing the trees to thrive in the island's distinctive terrain.
The result is a sophisticated extra virgin olive oil with a golden-green colour and intensely fruity aroma.
Estate Grown
Aegaea Organic is made exclusively from olives grown on Protoulis' own plots.
This Estate Grown approach gives the producer control over the process from the olive grove through harvesting and production.
Rather than sourcing olives from multiple growers, the journey of Aegaea begins in the family's own olive groves on Lesvos.
Their trees. Their harvest. Their oil.
Organic by Nature
The olive groves used for Aegaea Organic are organically cultivated.
Wild flowers and native Mediterranean plants are allowed to grow around the roots of the olive trees. Herbs such as oregano and rosemary naturally form part of the biodiversity of the groves.
Protoulis describes this environment as contributing to the rich aromatic character of the olives.
The terraced landscape around Plomari also provides well-drained soil, while the Kolovi trees develop deep root systems beneath the surface.
Hand-Picked Olives
The olives used for Aegaea Organic are harvested by hand.
Harvest takes place between approximately 20 October and 20 November, during the earlier part of the olive season.
After harvesting, the olives are processed using centrifugation and the oil is cold extracted at 25°C.
Maximum 0.2% Acidity
Aegaea Organic has a maximum free acidity of just 0.2% at bottling.
For perspective, the legal maximum for an olive oil to qualify as Extra Virgin Olive Oil is 0.8%.
Low acidity alone does not determine the quality of an olive oil, but together with careful cultivation, harvesting and extraction it forms part of Aegaea's quality profile.
