Protoleo is not an olive oil made in unlimited quantities.
Produced on the Greek island of Lesvos by the Protoulis family, Protoleo is a limited-production early harvest extra virgin olive oil made from olives picked at the very beginning of the harvest season.
Only 3,000 bottles are produced from each harvest, with every bottle individually numbered.

The First Olives of the Harvest
Protoleo is produced from green, unripe Kolovi and wild olives, harvested in mid-October — considerably earlier than olives intended for conventional olive oil production.
Early harvesting means significantly less oil can be extracted from each olive, but the resulting oil develops the intense, fresh character associated with green fruit.
The olives are harvested both mechanically and by hand and must be processed on the day of harvest or, at the latest, the following day.
Cold Extracted at Just 23°C
After harvesting, the olives are processed using centrifugation and the oil is cold extracted at only 23°C.
Protoleo has a maximum free acidity of 0.2%, considerably below the legal maximum of 0.8% for Extra Virgin Olive Oil.
The result is an intensely fruity olive oil with the characteristic bitterness and fresh, slightly peppery sensation of early harvested green olives.
Unfiltered by Nature
Protoleo is bottled unfiltered.
Because the oil has not been filtered, a small amount of natural sediment may gradually appear at the bottom of the bottle.
This is completely natural and characteristic of an unfiltered olive oil.
From Lesvos, Greece
Protoleo comes from Lesvos, an Aegean island with a centuries-old olive-growing tradition.
The Protoulis family has cultivated olive trees and produced olive oil for four generations, working among the rugged olive groves around the Plomari area of the island.
Protoleo carries the PGI (Protected Geographical Indication) designation, connecting the oil directly to its geographical origin.
What Does Protoleo Taste Like?
Expect an expressive early-harvest olive oil with:
Intense fruitiness • Fresh green character • Pleasant bitterness • Slightly peppery finish
This is deliberately not a neutral olive oil.
Its bitterness and pepperiness are part of the character of an early harvest EVOO made from green, unripe olives.
